Throw this together in minutes flat, for breakfast or
for a complete (meaning delicious, nutritious, filling) snack. You
can make this any time of year using frozen or canned peaches and
frozen strawberries, but there is absolutely nothing to compare
with the fresh peach version. So let this be your Summer
Special!
The recipe calls for ripe peaches, and this includes overripe
peaches as well, as long as they are not downright rotten. No
matter how bad your overripe (or damaged) peach looks before you
blend it, the smoothie will be beautiful when you're done. If you
are shopping at the farmers' market, look for bargain peaches
("seconds") which are often sold at a discount, because they might
be soft or bruised. Give these peaches a job! Once blended, no one
will ever know they had been marked down. A Cinderella story for
fruit.
NOTE: If all the ingredients (except maybe the banana) are
chilled ahead of time, you'll have a cold smoothie, ready-to-drink.
If not, you can chill the smoothie after it's blended.
2/3 cup orange juice
2 medium-sized ripe peaches„peeled, if necessary, and cut
into chunks
1/2 a ripe banana
1 to 2 cups strawberries (hulled and sliced)
1 cup plain, vanilla, or lemon yogurt
Optional:
Up to 1/2 cup protein powder (vanilla-flavored whey- or
soy-based)
Up to 2 teaspoons flaxseed oil
Maple syrup to taste
Put everything in a blender and pureé until smooth. Chill
until serving time.
